10” cheesecake
Pecan Crust
3 oz Toasted Chopped Pecans
2 ½ oz Crushed Graham Cracker
3 oz Butter
½ tsp Ground Cinnamon
2 oz Granulated Sugar
Method:
Mix together, press firmly into one 10 inch cake pan.
Mont Royal Brie Cheesecake Filling:
10 oz Mont Royal Brie (skin removed)
16 oz Cream Cheese
1 oz Cake Flour
8 oz Granulated Sugar
4 ea Whole Eggs
6 oz Heavy Cream (heated)
Method:
1. Place small pieces of brie in a large sauce pan. Add cream and heat until cheese melts into cream. Strain through a fine sieve. Cool completely.
2. In mixing bowl add the brie and sugar. Mix on speed one until smooth.
3. Scrape bowl often; add cake flour and cream cheese once no lumps appear in batter.
4.Mix until smooth, add egg slowly, scrape bowl after every 2 eggs.
5. Mix until batter is smooth and free of lumps.
6. Add cool cream.
7. Poor mix in the cake pan.
8. Bake in a 325°F pre-heated oven in Bain Marie for about 90 minutes or until the center is slightly set.
9.Chill. Unmold the next day.
Maple Cranberry Sauce (serves 4)
4 oz Milk
4 oz Heavy Cream
¼ ea Vanilla Bean
1 oz Sugar
2 oz Egg Yolks
1 oz Sugar
½ oz Sortilege by "La Maison des Futailles"
¼ cup Maple Sundried Cranberries by “ Fruit D’or”
****Soak the sundried cranberries with sortilege for 30 minutes.****
Method:
1. Heat milk, heavy cream, vanilla bean, and half of the sugar until it boils.
2. Remove the vanilla bean and reserve for other uses.
3. Combine egg yolks and the rest of sugar, then temper with part of the boiling milk while stirring constantly.
4. Pour liaison into the remaining milk and return to the heat.
5. Stirring constantly, cook slowly to stage of nappe or 180°F (80°C).
6.Remove immediately from stove and strain through a chinois, directly into a bain-marie in an ice bath.
7. When cool blend in the sundried cranberries.
Strawberry Champagne Compote
2 cup Diced Seasonal Berries (strawberry, blackberries, blueberry, raspberry)
1 sprig Basil Julienne
1 sprig Mint Julienne
2 Tbsp Strawberry Champagne Spread by “ Verger Duhaime”
Method:
1. Mix all ingredients together and refrigerate until serving time.
