
This region is justly famous for its nordic shrimp and snow crab. Less well known are the Stimson's surf clam, razor clam, whelk, hardshell clam, sea cucumber and baby scallop - delicacies fished all along the north shore of the St. Lawrence from Tadoussac to Mingan, and exported to Japan, among other countries. The chefs of the Côte-Nord have worked in harmony to develop a regional cuisine that makes the most of these resources. The area also abounds in small wild fruits: dewberries, blueberries, lingonberries, and the famed cloudberry, which grows in peat bogs and makes excellent preserves - not to mention a delicious apératif.
