Sogelco Snow Crab Salad with Red Bell Pepper Fondant and Tournevent "Chèvre Noir" Tuile

Ingredients

Red bell pepper fondant:
1 Tbsp butter
½ cup onions
1 red bell pepper diced
2 Tbsp white wine
2 sheets of gelatine
½ cup whipping cream
1 Espelette red hot peppers
Salt and pepper to taste

Crab salad:
½ cup Sogelco crab meat
8 Green beans
½ cup gourgane (broad bean)
2 oz cream
1 tsp lime juice
Salt & pepper to taste

Dressing:
1 Tbsp tahini
1 Tbsp soy sauce
1 tsp lemon juice
1 Tbsp fresh coriander
1 Tbsp basil
1 Tbsp parsley
1 Tbsp fresh chervil
1 tsp diced chives
1 cup olive oil
Salt & pepper to taste

Goat cheese tuile:
3 ½ ounces Tournevent « Chèvre Noir » Goat Cheese. (This is an aged cheddar-style goat cheese.)

Preparation

For Red Bell Pepper Fondant:
In a frying pan melt the butter and lightly sauté the onions. Add the red bell pepper and sauté for 5 minutes. Deglaze pepper and onion with white wine. Cook for 2 minutes. Mix in a blender until mixture becomes the consistency of a thin purée. Pass though a fine strainer. Season with salt and pepper.

Soak gelatin sheets in cold water. Remove water from gelatin sheets and add to the warm purée and let cool to room temperature.

While puree is cooling, whip the cream with the help of a mixer until soft peaks form. Gently fold into cream the Espelette hot-pepper, salt, pepper, and puree mixture. Spread combined ingredients into a shallow baking sheet ( 1 cm deep). Cover with plastic and refrigerate for at least 3 hours.

For Crab Salad:
Blanche broad beans in salted boiling water. Strain and cool. Remove the outer-layer of the beans and set aside. Cook green beans al dente in salted boiling water. Cut green beans into 2 inch pieces. Mix broad beans, green beans, and crab meat together. Add to mixture crème fraîche, lime juice, and salt and pepper. Stir well and refrigerate.

Dressing:
Combine all ingredients in food processor and mix to emulsion.

Tournevent Goat Cheese Tuile:
Grate "Chèvre Noir" cheese. Using the grated cheese, make 4 circle shapes on a pastry plate that is covered with a greaseproof paper (such as parchment paper or wax paperl). Place into a 375 degree oven until lightly golden. Remove and cool. Serve as salad garnish.
